What an Islamic will is, in Canadian law
There is no separate legal category called an Islamic will. What people mean by the phrase is an ordinary provincial will whose distribution clauses set out the faraid shares instead of dividing equally. Canadian testamentary freedom is what makes that possible: you may leave your estate as you choose, subject to dependant-support and — in British Columbia — wills-variation claims.
Two things therefore have to be right at once. The fractions, which come from the Qur'an and do not change by province. And the formalities, which are provincial and decide whether the document works at all.

What is actually local
The law is provincial, so a “Toronto Islamic will” is an Ontario will. What genuinely differs city by city is the community layer around the will: which mosques have the physical facilities to perform a janazah — a mortuary, cold storage, a washing room — where they bury, and what a burial costs there.
